The Art of Panning
In 2021 we brought an Italian small-batch chocolate panner into the factory and started creating a whole new family of confections. We spent months selecting chocolates and tracking down interesting, often local, centers to coat — then began turning out glossy, beautifully finished pieces in-house.
Don’t know what “panning” means? It’s simple and old-school: a large stainless drum turns while we tumble fruit, nuts, or other centers and stream in melted chocolate by hand. Chilled air sets each thin layer so the coating builds up smoothly; friction polishes the surface. We finish with colored chocolates or a confectioner’s glaze for that signature shine.
