The Art of Panning
In 2021 we brought an Italian small-batch chocolate panner into the factory and started creating a whole new family of confections. We start with Cacao-Trace chocolate—chosen for its clean melt, bright cocoa profile, and a program that supports cocoa-growing communities—then build flavor and texture one thin coat at a time.
Don’t know what “panning” means? It’s simple and old-school: a stainless drum turns while we tumble nuts, fruits, or other centers and stream in melted chocolate by hand. Cool air sets each layer so the coating builds up smoothly; polishing brings that signature gloss.
